Preheat the oven to 350F or 180C and line a baking sheet with parchment paper or a silicone mat.
Combine the coconut, sugar, flour and salt in a large bowl. Stir well.
Add the egg white and vanilla extract and stir until no dry patches remain.
Use your hands to shape balls of dough and place them on the baking sheet.
Using your fingers, press the cookies flat.
Place the cookies in the oven and then turn the heat down to 325F or 150C.
Bake for about 20 minutes or until the edges are nicely brown.
Let cookies cool on the sheet for 1 minute and then move to a rack to cool completely.
Now melt the chocolate in a pot over a low flame. Using a spoon, drizzle it over the cookies.
